Chicken Potpie Cupcakes

One of the best comfort foods is chicken potpie.  I came across this idea online and tweaked it a bit and love this super easy chicken potpie cupcake.  Just a few simple ingredients are needed and about only 20 minutes from start to finish make this an easy weeknight meal.  Serve with a simple tossed salad.


Recipe:

Ingredients-

2 Cans of biscuits (I used Pillsbury's grands)
1 Chicken breast cooked and diced (rotisserie works well)
1 can of cream of chicken soup
1 cup of mixed frozen vegetables
1 cup shredded cheese
1tsp Italian Seasoning
1 tsp onion powder
1 tsp garlic powder



  1. Preheat oven to 400
  2. Mix all ingredients in a large bowl
  3. Place biscuits into lightly greased muffin pan.  Spread biscuit up sides and gently press down into pan.
  4. Scoop chicken mixture into each prepared biscuit.  
  5. Cook in oven for 15 minutes.
  6. Let rest a few minutes as filling will be very hot!
  7. Enjoy!

Quick Breakfast Ideas

Recipe Idea of the Week:

A Week's Worth of Quick Breakfast Ideas:
  1. Toast a whole wheat english muffin, spread peanut butter on top, slice bananas on top, and drizzle a little honey over.
  2. Create an easy egg burrito- scramble an egg, quickly heat precooked breakfast sausage. Warm a tortilla, place eggs, sausage, shredded cheese, and salsa on top and roll up.
  3. Spread nutella on toasted bread, add some blueberries or sliced strawberries on top.
  4. Slice apples into rings, spread with peanut butter and top with raisins and granola.
  5. On a piece of crusty bread or toast spread ricotta cheese, top with honey, and fruit. (or spread with some jam)
  6. Build a yogurt parfait. Spoon greek yogurt into a bowl and top with fresh fruit and granola.
  7. Egg in a cup!Spray a mug with your favorite oil spray. Scramble some egg, cream, salt and pepper in a mug and microwave for 30- 45 seconds. (Add ins- fresh herbs, shredded cheese)
